Chef Marco Colin


As a “homegrown” chef hailing from Chicago, Marco Colin has lived in Chicago his entire life and grew up in the kitchen. From a young age, he was immersed in an environment where a love and respect for food and fresh ingredients was of the utmost importance.

Colin has worked at a wide variety of critically acclaimed restaurants in Chicago over the last decade including The Publican, Alinea and Soho House. He believes the most flavourful cuisine is made simply with fresh ingredients that help to ensure that each dish is as distinctive as it is delicious. Each menu that Colin creates is amplified by his extensive culinary knowledge and exceptional creative twists on classic concepts. He loads his dishes with excitement and ensures that each concept that he creates is uniquely his own.
